As a Madison food photographer, I've had the privilege of shooting a lot of incredible food over the years, but few projects have meant as much to me as Zameen, the debut cookbook from Chef Sultan of Sultan Restaurant here in Madison, Wisconsin. I had the honor of photographing this book from start to finish, and I couldn't be prouder to share that it's now available for preorder.
The Story Behind Zameen
Zameen, which means "land", is Chef Sultan's love letter to two places at once:
Karachi, Pakistan, where he was born, and Wisconsin, where he's built his life and his restaurant. The cookbook reimagines Pakistani cooking through the lens of the Midwest, using grass-fed Wisconsin beef in nihari, local mill flour in paratha, and Punjabi spice alongside Japanese curing techniques on regionally farmed fish. It's a genuinely new regional American cuisine, and it's rooted in a first-generation immigrant's journey from a family kitchen in Karachi to a dining room right here in Madison.
What makes this book stand out to me, even as someone outside the kitchen, is how intentional it is. This isn't a shortcut cookbook. Chef Sultan asks readers to toast and grind their own spices, to braise meat until it truly surrenders, and to think about spice cookery as a relationship with ingredients rather than a fixed formula. It's technique first cooking for people who want to slow down and actually learn.
Why This Project Meant So Much to Me
Madison's food scene keeps proving it's about more than any one cuisine or trend, it's about people bringing their whole story to the table. Zameen is a perfect example of that, and getting to photograph it meant spending real time with Chef Sultan's food, and learning the intention behind every dish before I ever picked up my camera.
Capturing that level of craftsmanship, dish after dish, was one of the most rewarding shoots I've worked on.
